Ingredients

  • 250 mL (1 cup) of Hollandaise Sauce Mix
  • 25 mL (5 tsp) of unsalted butter, melted
  • 190 mL (3/4 cup) of boiling water
  • 3 gelatin sheets
  • 80 g (3 oz) of sugar
  • 5 mL (1 tsp) vanilla extract
  • 375 mL (1-1/2 cups) of cream 35%, whipped
  • 10 tartlets
  • 400 g (14 oz) of fresh fruits
  • 125 mL (1/2 cup) of apricot glaze, warmed

Preparation

  • Prepare the Hollandaise Sauce as follows:
  • Mix 25 mL of melted unsalted butter and 120 mL of Hollandaise Sauce mix until uniform.
  • Add mix to 190 mL of boiling water, bring back to boil, stirring constantly. Let stand 2 minutes. Stir again until smooth.
  • Blend the warm Hollandaise Sauce with the gelatin, sugar and vanilla extract.
  • Let the mixture cool down until it starts to resemble mayonnaise.
  • Gently fold in the whipped cream.
  • Fill the tartlet to 3/4 full. Refrigerate until firm.
  • Top each tartlet with fresh fruits. Glaze with a little warm apricot glaze.
