Ingredients

  • 500 mL (2 cups) of prepared Instant, Gluten-Free Hollandaise Sauce Mix
  • 250 mL (1 cup) of whole wheat flour
  • 250 mL (1 cup) of all purpose flour
  • 250 mL (1 cup) of sugar
  • 10 mL (2 tsp) of baking powder
  • 2 mL (1/2 tsp) of salt
  • 5 mL (1 tsp) of vanilla extract
  • 330 mL (1-1/3 cup) of strawberries, diced
  • 190 mL (3/4 cup) of white chocolate chips

Preparation

  • Prepare the hollandaise sauce according to instructions on package and set aside.
  • Preheat oven to 400°F.
  • Grease and flour a muffin tin.
  • In a big mixing bowl, mix the dry ingredients together (except the chocolate). Set aside.
  • Mix the vanilla with the hollandaise sauce.
  • Form a well in the center of the dry ingredients and add the liquid ingredients. Mix delicately with a spatula.
  • Add strawberries and chocolate and mix well.
  • Pour the batter in the muffin tin.
  • Bake on the middle rack for 20-25 minutes, or until muffin tops are golden and a tooth pick comes out clean.
