Quick Breakfast Burritos with Cheese Sauce

Ingredients

  • 600 mL (2-1/2 cups) of prepared Instant Cheese Sauce Mix
  • 400 g (1 lb) of pork sausage meat or ground pork
  • 210 g (1/2 lb) of onions, finely diced
  • 60 g (4 tbsp) of margarine
  • 6 eggs, beaten
  • 10 tortillas, soft
  • Salt and pepper, to taste

Preparation

  • Prepare the cheese Sauce according to package directions. Keep warm.
  • On high heat, cook ground pork or pork breakfast sausage meat.
  • Add onions and season with salt and pepper. Reserve hot or cold for service.
  • On medium heat, cook the beaten eggs in margarine or butter.
  • If cooled, chop up the eggs for service, heat up in a microwave.
  • Lay a tortilla flat and stuff with 1/10th each of meat stuffing, cheese sauce and scrambled eggs.
  • Roll up, tucking in the ends first and then roll in a microwaveable wrapping.
  • Reserve refrigerated until ready to use. Heat up in a microwave.
