- Use as a soup base for chowder or cream of vegetable. - Use as a sauce base for a seafood coquille or cheese sauce. - Simplify your operations by using it as a replacement for cooking cream.


To prepare: 1 L 37 L 1 L 25 L
Mix: 100 g 3.5 kg 150 g 3.5 kg
Water: 1 L 35 L 1 L 23 L

TO PREPARE 1 L: Add mix to 3/4 of the cold or hot water (>60°C/140°F), stirring vigorously with a whisk. Add the remaining cold or hot water (>60°C/140°F) and stir. Heat and hold above 65°C (150°F). Stir before serving. TO PREPARE A LARGE QUANTITY: Pour mix in the steam pot. Add 3/4 of the cold or boiling water all at once. Blend thoroughly using a Bermixer type blender until smooth. Gradually add the remaining cold water, stirring with the blender until smooth. Heat and then hold above 65°C (150°F), stirring occasionally.
