Ingredients

  • 500 mL (2 cups), prepared, of
  • 65 g of shallots, sliced
  • 15 mL (1 tbsp) of butter
  • 200 mL (3/4 cup) of white wine
  • 15 mL (1 tbsp) of taragon, chopped
  • 65 g of mushrooms, sliced

Preparation

  • Prepare demi-glace according to package instructions, keep warm.
  • In a pan sweat the shallots and mushrooms in butter.
  • Add white wine and let it reduce by half.
  • Add the demi-glace and tarragon and combine.
  • Serve and enjoy.
