- Use as a mother sauce to create derivatives, such as a peppercorn or mushroom sauce. Use on chicken, pork, beef, lamb or other red or white meats. Use as an alternative for poutine sauce.
Preparation

Mix: | 125 g | 20 kg |
Cold Water: | 250 mL | 16 L |
Boiling Water: | 750 mL | 144 L |
Make a paste with mix and cold water. Add paste to boiling water, stirringconstantly with a whisk. Bring back to boil. Reduce heat and allow to simmer 3 minutes, stirring occasionally.
