Poutine is a Quebec staple, how about this breakfast version for those mornings when you really need a pick-me-up!

Preparation
- Prepare the Hollandaise sauce according to the package directions, set aside and keep warm.
- Deep fry the home fries, divide into ten portions.
- Sprinkle cheese onto portions.
- Add a poached egg on top of each portion and pour the hollandaise sauce on top.
- Garnish with chives and serve immediately.
Make individual portions in little ramekins and serve small portions of this rich creation.

- 1 L (4 cups) of prepared Hollandaise Sauce Mix
- 2 kg (4 lbs) of home fries, deep fried
- 500 g (1 lb) of cheddar cheese, grated
- 10 poached eggs
- 100 mL (7 tbsp) of chives
