Ingredients

  • 1 L (4 cups) of prepared Hollandaise Sauce Mix
  • 2 kg (4 lbs) of home fries, deep fried
  • 500 g (1 lb) of cheddar cheese, grated
  • 10 poached eggs
  • 100 mL (7 tbsp) of chives

Preparation

  • Prepare the Hollandaise sauce according to the package directions, set aside and keep warm.
  • Deep fry the home fries, divide into ten portions.
  • Sprinkle cheese onto portions.
  • Add a poached egg on top of each portion and pour the hollandaise sauce on top.
  • Garnish with chives and serve immediately.

Make individual portions in little ramekins and serve small portions of this rich creation.
