Ingredients

  • 1 L (4 cups) of prepared Instant, Gluten-Free Culinary Cream Base
  • 100 mL (7 tbsp) of butter
  • 1 onion, finely diced
  • 4 garlic cloves, finely minced
  • 300 g of mussels, cooked (remove shells and reserve cooking juice)
  • 150 g of sharp cheddar cheese, shredded
  • 15 mL (1 tbsp) of dill, fresh or dry
  • 800 g of seafood and/or fish of your choice, cooked
  • 10 puff pastry triangles 3" by 3", cooked

Preparation

  • Prepare the Seafood Sauce according to package directions. Keep warm.
  • In a large sauce pot, heat the butter or margarine over medium flame until almost brown.
  • Add the onions and garlic and sweat for 3-4 minutes.
  • Deglaze with the mussel juices, allow to reduce by half. Add the sauce, cheese and dill.
  • Bring to a soft boil for 2-3 minutes then add the mussels and the cooked fish and seafood.
  • Simmer for 4 minutes, being careful not to break up the fish and seafood.
  • Serve in the bottom half of the puff pastry triangle and top with the other half.
