- Use as a soup base for chowder or cream of vegetable. Use as a sauce base for a seafood coquille or cheese sauce. Simplify your operations by using it as a replacement for cooking cream.
Preparation

| Mix: | 62 g | 10 kg |
| Cold Water: | 500 mL | 80 L |
| Milk: | 500 mL | 80 L |
Combine mix with water, stirring with a whisk. Add the milk, stirring. Bring to boil. Reduce heat and allow to simmer 3 minutes, stirring occasionally.
To prepare a cream sauce: Use all milk instead of half water and half milk. TO PREPARE THE SAUCE: Double the quantity of milk.
