Ingredients

  • 45 mL (3 tbsp) LUDA Booster Mexican Booster
  • 2.5 L (10 cups) LUDA H Vegetable soup base
  • 60 mL (1/4 cup) Olive oil
  • 2 Onions, chopped
  • 3 Carrots, peeled and diced
  • 1 L (4 cups) Tomatoes, chopped
  • 1 can Corn niblets, rinsed and drained
  • 1 can Black beans, rinsed and drained
  • Tortilla chips, to taste
  • 2 Avocados, diced
  • Cilantro, to taste, chopped
  • Lime, to taste, cut in quarters

Preparation

  1. Prepare the vegetable soup base according to package instructions, add the Booster, keep warm and set aside.
  2. In a large pot, add olive oil and heat up over medium heat.
  3. Once hot, add onions and sauté until translucent.
  4. Add in carrots, beans, corn and tomatoes and continue cooking for a few minutes, stirring frequently.
  5. Pour the broth into the pot with the vegetables and let the soup cook for about 20 minutes.
  6. Portion the soup in bowls and garnish with avocado, tortilla chips, cilantro and lime.
  7. Serve and enjoy.
