Mexican Tortilla Soup

Preparation
- Prepare the vegetable soup base according to package instructions, add the Booster, keep warm and set aside.
- In a large pot, add olive oil and heat up over medium heat.
- Once hot, add onions and sauté until translucent.
- Add in carrots, beans, corn and tomatoes and continue cooking for a few minutes, stirring frequently.
- Pour the broth into the pot with the vegetables and let the soup cook for about 20 minutes.
- Portion the soup in bowls and garnish with avocado, tortilla chips, cilantro and lime.
- Serve and enjoy.
Ingredients
- 45 mL (3 tbsp) LUDA Booster Mexican Booster
- 2.5 L (10 cups) LUDA H Vegetable soup base
- 60 mL (1/4 cup) Olive oil
- 2 Onions, chopped
- 3 Carrots, peeled and diced
- 1 L (4 cups) Tomatoes, chopped
- 1 can Corn niblets, rinsed and drained
- 1 can Black beans, rinsed and drained
- Tortilla chips, to taste
- 2 Avocados, diced
- Cilantro, to taste, chopped
- Lime, to taste, cut in quarters
