- Use as a mother sauce to create derivatives, such as a primavera or carbonara. - Marinade a pork loin or chicken to enhance their flavour and keep them tender and moist.


To prepare: 1 L 73 L
Mix: 190 g 15 kg
Cold Water: 250 mL 7 L
Boiling Water: 550 mL 55.5 L

Add mix to cold water while stirring. Mix well. Add to boiling water, stirring with a whisk. While stirring occasionally, bring back to boil, reduce heat and simmer 3 minutes. Sauces made following these directions are steam table stable and freezable.
