Onion Soup Chicken
This recipe for chicken with onion soup is both delicious and economical. Traditional and comforting, its roasted onion flavor is predominant.

Preparation
- Preheat oven to 205°C (400°F).
- In a saucepan, whisk onion soup mix with the white wine and water. Add chopped onions and cook for 5 minutes over low-medium heat. Remove from heat.
- Season breasts with pepper.
- In a skillet, heat a little olive oil over medium heat. Brown the chicken breasts for 2 to 3 minutes on each side.
- Place breasts in a 33 cm x 23 cm (13″ x 9″) baking dish. Coat chicken breasts with onion mixture. Cover with mozzarella cheese.
- Bake for 18 to 20 minutes, until the inside of the chicken has lost its pink color.

- 125 mL (1/2 cup) of white wine
- 2 sliced onions
- 4 chicken breast
- 375 mL (1 1/2 cup) of grated mozzarella
- 500 mL (2 cups) of water
- pepper, to taste
