Ingredients

  • 3 L (12 cups) of prepared Onion Soup Mix
  • 80 mL (5 tbsp) of Aromatic Seasoning Mix
  • 950 g (2 lbs) of red onion, sliced
  • 125 mL (1/2 cup) of olive oil
  • 20 mL (4 tsp) of thyme
  • 3 bay leaves
  • 275 mL (1 cup + 1 tbsp) of white wine
  • 500 mL (2 cups) of mozzarella cheese
  • 500 mL (2 cups) of swiss cheese
  • Bread croutons, garnish

Preparation

  • Prepare the onion soup according to the package directions.
  • Caramelize the onions in the olive oil.
  • Add the aromatic seasoning mix, thyme, bay leaves
  • Deglaze the pan with the white wine and reduce the liquid by half.
  • Add the prepared onion soup and simmer until the onions are tender.
  • Gratiné to order with the croutons and cheese.

Serve this delightful soup in bowls that have covers. The soup will keep hot and guests will love the added touch.
