Gluten Free Hungarian Style Stew
While most stews are thickened with flour and butter, this Hungarian option makes use of potatoes instead and is entirely gluten free. This dish epitomizes Austro-Hungarian comfort food, and is best served with homeade spätzle.

Preparation
- Prepare Beef soup base according to the package directions, keep warm.
- In a large bowl rub the condiment mix for meat on the meat along with half of the paprika.
- Cook the bacon over medium flame in a large pot until the bacon is crispy, remove the bacon from the pot and reserve.
- Increase the heat to a high flame and brown the meat in the canola oil, then add the peppers, onions and garlic and sweat at a reduced medium flame for 4-5 minutes.
- Add the rest of the ingredients except for the potatoes and simmer slowly until the beef is almost tender, about 80% cooked.
- Add the potatoes, and cooked bacon. Simmer over a low flame until the potatoes are cooked, serve.

- 1.4 kg (3 lbs) of beef cubes
- 175 mL (3/4 cup) of sweet Hungarian paprika
- 200 g (10 oz) of bacon, julienne
- 160 mL (2/3 cup) of canola oil
- 3 bell peppers, diced
- 2 red onions, finely diced
- 30 mL (2 tbsp) of garlic powder
- 750 mL (3 cups) of tomatoes, diced
- Black pepper
- 2 kg (4.5 lbs) of potatoes, peeled and diced
