- Use as a vegetarian mother sauce to create derivatives, such as a mushroom gravy or Dijonnaise. Use as the base for sauce-based dishes, such as a beef bourgignon. Thicken and enhance the drippings from roasts and stews.
Preparation

| Mix: | 100 g | 10 kg |
| Cold Water: | 125 mL | 10 L |
| Boiling Water: | 875 mL | 90 L |
Add mix to cold water while stirring. Mix well. Add to boiling water, stirring with a whisk. While stirring occasionally, bring back to boil, reduce heat and simmer 3 minutes.
