Preparation

To prepare: 1 L 125 L
Base: 80 g 10 kg
Cold Water: 600 mL 75 L
Milk: 400 mL 50 L
Seafood: 160 g 20 kg

Combine base with water, stirring with a whisk. Bring to boil and add milk, stirring. Add seafood. Reduce heat, cover partially and allow to simmer 15 minutes, stirring occasionally.
