- Use as a mother sauce to create derivatives, such as a peppercorn or mushroom sauce. Use on chicken, pork, beef, lamb or other red or white meats. Use as an alternative for poutine sauce.
Preparation
| To prepare: | 1 L | 210 L |
| Mix: | 100 g | 20 kg |
| Cold Water: | 125 mL | 25 L |
| Boiling Water: | 875 mL | 175 L |
Add mix to cold water while stirring. Mix well. Add to boiling water, stirring with a whisk. While stirring occasionally, bring back to boil, reduce heat and simmer 3 minutes. Sauces made following these directions are steam table stable and freezable.
