Scrumptious Turkey Meatball Chili

Ingredients

  • 1.5 L (6 cups) of prepared Instant, Gluten-Free Culinary Tomato Base
  • 30 mL (2 tbsp) of vegetable oil
  • 500 g of turkey meatballs, pre-cooked and browned
  • 2 onions, chopped
  • 3 bell peppers, chopped
  • 15 mL (1 tbsp) of chili powder
  • 5 mL (1 tsp) of cumin powder
  • 5 mL (1 tsp) of dry oregano
  • 5 mL (1 tsp) of garlic powder
  • 500 mL (2 cups) of kidney beans, rinsed and drained
  • 500 mL (2 cups) of black beans, rinsed and drained
  • Salt and pepper, to taste

Preparation

  • Prepare the tomato sauce according to package instructions, keep warm and set aside.
  • In a heavy bottomed pot add vegetable oil (and brown the meatballs if not using pre-cooked meatballs).
  • Add onions and bell peppers and keep cooking while stirring until softened, about 2-3 minutes.
  • Add chili powder and cumin and keep stirring for 1-2 minutes.
  • Add in the tomato sauce and the rest of the ingredients, and let simmer for 20-30 minutes or until meatballs are cooked though. Serve and enjoy.

Serve over brown rice for a healthy option.
