Ingredients

  • 2.25 L (9 cups) of Beef Soup Base
  • 3 onions, sliced
  • 30 mL (2 tbsp) of butter
  • 5 mL (1 tsp) of thyme
  • 1 french baguette, sliced
  • 1 L (4 cups) Gruyère cheese, grated

Preparation

  • Prepare the beef soup base according to package instructions, keep warm and set aside.
  • In a large pan add the butter and let it melt on medium, heat.
  • Add in the onions and spread them out in an even layer, add in the thyme as well.
  • Stir onions often to prevent them from sticking, until they are completely soft and golden brown.
  • Add the caramelized onions to the beef broth and stir well.
  • In the ramekins portion the soup and top with a slice of baguette and the Gruyere cheese.
  • Put the ramekins under the broiler, or use a blow torch to melt the cheese on top. Serve and enjoy.
