Creamy Green Bean Casserole

Ingredients

  • For baked “fried” onions
  • 1 large onion
  • 1/2 cup (62 g) of all-purpose flour
  • 3/4 cup (45 g) of Panko breadcrumbs
  • Salt and ground black pepper to taste
  • 1 large egg
  • 1 tbsp (15 mL) of milk
  • For green bean casserole
  • 1 lbs (450 g) of fresh green beans, rinsed, trimmed and halved
  • 2 tbsp (30 g) of unsalted butter
  • 8 oz (225 g) of mushrooms, sliced into halves
  • 2 cloves of garlic, minced
  • 2 tbsp (30 g) of all-purpose flour
  • 2 cups (500 mL), prepared Plant-Based, No-Chicken Gravy Mix
  • Salt and pepper to taste

Preparation

  • Preheat oven to 475°F.
  • Pour flour in one small bowl, and Panko into a medium bowl. Whisk egg and milk together in another small bowl. Bread the onion slices.
  • Place onto lined baking sheet and bake until golden brown, about 25 minutes. Flip them twice during this time. Set them aside.
  • Reduce oven to 400°F.
  • Blanch beans in salted water for 5 minutes. Drain and place into bowl of ice water to stop cooking process. Drain and set aside.
  • Over medium-high heat, melt butter in a large 12 inch ovenproof skillet. Add mushrooms, salt and pepper. Cook until mushrooms begin to give off some of their moisture – about 5 minutes.
  • Add garlic, stir, and cook for another 2 minutes. Sprinkle the flour on top and stir until combined.
  • Add No-Chicken Gravy and simmer for 3 minutes. Decrease heat to medium-low and keep stirring for an additional 3 minutes.
  • Remove from heat. Add 1/4 of the onions and all of the green beans. Stir, combining sauce and beans. Top with remaining onions and bake until bubbly, about 10-15 minutes. Remove from the oven and enjoy!
