Ingredients

  • 1.8 L (7 cups) LUDA H Chicken soup base
  • 30 mL (2 tbsp) Vegetable oil
  • 1 Onion, diced
  • 3 stalks Celery, diced
  • 3 Carrots, diced
  • Kosher salt, to taste
  • 600 g (1.3 lbs) Chicken thighs, cooked and chopped
  • 1 L (4 cups) Pasta, cooked

Preparation

  1. Prepare the chicken soup base according to package instructions, keep warm and set aside.
  2. In another pot heat up canola oil and saute onions, celery and carrots with a pinch of salt.
  3. Cook and stir the vegetables occasionally until they start to soften about 3-5 minutes.
  4. Pour the chicken soup base into the pot with the vegetables and bring to a simmer.
  5. Add the chicken and the pasta, continue simmering for 2-3 minutes. Serve and enjoy.

Use your favourite pasta in this soup; macaroni noodles to spaghetti, everything works.
