Preparation
MEATBALLS
- In a bowl, mix all the meatballs ingredients.
- Shape the meat mixture into small balls (around 3/4″) and set aside.
SOUP
- Prepare the chicken soup base in a large pot according to instructions on the package.
- Delicately stir in the meatballs, carrots, leafy greens, and pasta.
- Bring to a boil, reduce heat to medium, and let simmer for about 10 minutes, stirring frequently.
- Soup is ready when meatballs are cooked through and pasta is al dente.
Sprinkle with freshly grated parmesan for added style and flavour.

- 60 mL (1/4 cup) LUDA Original Breadcrumbs
- 30 mL (2 tbsp) Parmesan cheese, grated

- 454 g (1 lb) Ground veal
SOUP
- 2 L (8 cups) LUDA Original Chicken soup base, prepared
- 250 mL (1 cup) Carrots, diced
- 500 mL (2 cups) Leafy greens (spinach, kale, chard, or other), thinly sliced
- 250 mL (1 cup) Orzo pasta, dry
