Ingredients

  • 30 mL (2 tbsp) LUDA Booster Greek Booster
  • 100 mL (7 tbsp) Lemon juice
  • 100 mL (7 tbsp) Olive oil
  • 100 mL (7 tbsp) Canola oil
  • 1 L (4 cups) Cucumbers, seeded, chopped
  • 1 L (4 cups) Tomatoes, chopped
  • 1 L (4 cups) Bell peppers, chopped
  • 200 mL (3/4 cup) Red onion, sliced
  • 500 mL (2 cups) Feta cheese, cubed
  • 300 mL (1-1/4 cup) Black olives

Preparation

  1. Mix the Greek Booster with the lemon juice and the oils and whisk thoroughly, set aside.
  2. In a large bowl, mix the rest of the ingredients.
  3. Pour the dressing over the salad and toss thoroughly.
  4. Let salad sit for several minutes before serving for flavours to mix. Serve and enjoy.

Grill some pita bread and serve with the salad to soak up the juice.
