- Serve for dipping rotisserie chicken and fries. Use as an alternative for poutine sauce.

Preparation

1 L 36 L
Mix: 125 g (~3/4 cup) 4.5 kg
Cold Water: 250 mL 9 L
Boiling Water: 750 mL 27 L

Make a paste with mix and cold water. Add to boiling water, stirring with a whisk. Bring back to boil. Reduce heat and allow to simmer 3 minutes, stirring occasionally.
