Sloppy Joes

A healthy but flavourful take on the popular sloppy joe dish. Replacing beef with half ground poultry and half lentils allows for a lower fat, higher fibre meal.

Ingredients

  • 95 g (3 oz) LUDA Inspiration Culinary Tomato Base, dry mix
  • 625 mL (2.5 cups) Water, boiling
  • 30 mL (2 tbsp) Vegetable oil
  • 600 g (1.5 lbs) Ground turkey
  • 20 mL (1-1/2 tbsp) LUDA Inspiration Condiment mix for meat
  • 1 Onion, chopped
  • 2 cloves Garlic, chopped
  • 1 Green bell pepper, chopped
  • 15 mL (1 tbsp) Worcestershire sauce
  • 15 mL (1 tbsp) Red wine vinegar
  • 500 mL (2 cups) Lentils, drained and rinsed
  • 10 Hamburger buns, toasted

Preparation

  1. In a sauce pan, add the tomato sauce dry mix gradually in 500 mL of the boiling water while whisking.
  2. Add the remaining water, mix well, keep warm and set aside.
  3. Heat oil in a skillet over medium-high heat, add ground turkey and cook through (about 5 minutes), crumbling the turkey. Add the condiment mix for meat and mix well.
  4. Add onion, garlic, bell pepper, Worcestershire sauce, and red wine vinegar. Reduce heat to medium and keep cooking, stirring frequently, for another 2 minutes or until softened.
  5. Add the lentils and the tomato sauce, mix well, reduce heat to a simmer and let simmer for about 5 minutes.
  6. Ladle the sauce in toasted buns and serve alongside a salad. Enjoy!

Serve on a hamburger bun, ciabatta roll, or on a bed of rice. Accompany with a salad.
