Indian Chicken Pizzas on Naan

Ingredients

INDIAN PIZZA SAUCE

  • 40 g (1-1/3 oz) LUDA Inspiration Culinary Tomato Base, dry mix
  • 10 g (1/3 oz) LUDA Inspiration Culinary cream base, dry mix
  • 60 mL (1/4 cup) LUDA Booster Indian Booster
  • 300 mL (1-1/5 cup) Water

PIZZAS

  • 1 kg (2 lbs) Chicken breasts, cut into strips
  • 45 mL (3 tbsp) LUDA Booster Indian Booster
  • 30 mL (2 tbsp) Vegetable oil
  • 10 pieces Naan bread
  • 1 Red onion, thinly sliced
  • 1 Green bell pepper, thinly sliced
  • 500 g (1 lb) Mozzarella cheese, grated
  • 20 mL (4 tsp) Indian Booster, optional
  • 150 mL (2/3 cup) Cilantro, washed, pat dry, leaves plucked

Preparation

  1. Mix all the ingredients for the pizza sauce in a small bowl with a whisk. Refrigerate.
  2. Preheat oven to 400F.
  3. In a bowl, mix the Indian Booster with the chicken strips and refrigerate to let marinate for 30 minutes and more.
  4. In a pan at high heat, sear the chicken strips in the vegetable oil until well done. Set aside.
  5. Set the naan breads on a pizza pan and cover with sauce. Garnish the pizzas with the red onions, bell pepper, and chicken.
  6. In a bowl, mix the shredded cheese with the remaining Booster, to taste. Sprinkle on pizzas.
  7. Cook for 10 minutes in the oven.
  8. Put the pizzas under the salamander until the cheese is starting to bubble and get golden. Serve and sprinkle with fresh cilantro leaves. Enjoy.

Sprinkle with fresh cilantro and lime wedges.
