Greek Style Fresh Trout Salad

Preparation
- In a shallow dish mix the pepper and the Booster.
- Dredge the trout fillets in the seasoned Booster and sear in a hot frying pan. Keep cooked fish aside and let cool.
- Mix the vinegar, olive oil, juice and lime zest and pour over tomatoes.
- Spoon tomato salad over the fish and serve over grilled vegetables.

- 10 mL (2 tsp) LUDA Booster Greek Booster
- 10 Trout, fillets
- 150 mL (2/3 cup) Taragon vinegar
- 400 mL (1-2/3 cup) Olive oil
- Pepper, to taste
- 3 Limes, juiced and zested
- 1.5 L (6 cups) Cherry tomatoes, cut in quarters
