Ingredients

  • 10 mL (2 tsp) LUDA Booster Greek Booster
  • 10 Trout, fillets
  • 150 mL (2/3 cup) Taragon vinegar
  • 400 mL (1-2/3 cup) Olive oil
  • Pepper, to taste
  • 3 Limes, juiced and zested
  • 1.5 L (6 cups) Cherry tomatoes, cut in quarters

Preparation

  1. In a shallow dish mix the pepper and the Booster.
  2. Dredge the trout fillets in the seasoned Booster and sear in a hot frying pan. Keep cooked fish aside and let cool.
  3. Mix the vinegar, olive oil, juice and lime zest and pour over tomatoes.
  4. Spoon tomato salad over the fish and serve over grilled vegetables.
