Ingredients

  • 30 mL (2 tbsp) of
  • 1.5 kg (3 lbs) of chicken breasts, cut into 1'' cubes
  • 30 mL (2 tbsp) of olive oil
  • 1 lemon, juice and zest
  • 1 red onion, cut into 1" pieces
  • 2 zucchini, cut in medallions
  • 3 bell peppers, cut into 1" pieces
  • Salt and pepper, to taste

Preparation

  • In a large bowl add chicken, onions, Booster, olive oil, lemon juice, salt and pepper.
  • Toss to combine and coat the chicken evenly, let marinate for about 30 minutes.
  • Add in the zucchini and bell peppers and toss again.
  • Skewer the meat alternating with the vegetables.
  • Preheat the grill on medium heat, and grill the skewers turning every 2-3 minutes for even grilling, until the chicken is cooked through.
  • Remove from grill, portion and serve.

Serve with rice or roasted baby potaotes for a full meal.
