Ingredients

  • 2 L (8 cups) LUDA H Chicken soup base
  • 30 mL (2 tbsp) Tamari soy sauce
  • 30 mL (2 tbsp) Rice vinegar
  • 1.5 kg (3 lbs) Chicken breasts, cooked and cut in cubes
  • 2.5 L (10 cups) Udon noodles, cooked and drained
  • 2 L (8 cups) Kale, cleaned and finely chopped
  • 1 L (4 cups) Oyster mushrooms, cleaned and torn up
  • 2 Limes, cut in quarters

Preparation

  1. Prepare the soup base according to the package instructions.
  2. Add the tamari, and the rice vinegar, keep hot and set aside.
  3. Divide the noodles and the vegetables to the individual bowls.
  4. Pour the hot soup into the bowls.
  5. Garnish with lime wedges, serve and enjoy.
