Preparation
- Prepare the soup base according to the package instructions.
- Add the tamari, and the rice vinegar, keep hot and set aside.
- Divide the noodles and the vegetables to the individual bowls.
- Pour the hot soup into the bowls.
- Garnish with lime wedges, serve and enjoy.
Ingredients
- 2 L (8 cups) LUDA H Chicken soup base
- 30 mL (2 tbsp) Tamari soy sauce
- 30 mL (2 tbsp) Rice vinegar
- 1.5 kg (3 lbs) Chicken breasts, cooked and cut in cubes
- 2.5 L (10 cups) Udon noodles, cooked and drained
- 2 L (8 cups) Kale, cleaned and finely chopped
- 1 L (4 cups) Oyster mushrooms, cleaned and torn up
- 2 Limes, cut in quarters
