Preparation
- Place champagne and shallots in a sauce pan, bring to a boil, and let it cook until it is reduced by half.
- Prepare the poultry gravy according to instructions on package and keep warm.
- Remove the champagne and shallots from the heat and mix with the poultry gravy.
- Gradually add the butter to the sauce while stirring with a whisk, and add the tarragon.
- Serve over poultry, mash, or vegetables.

- 500 mL (2 cups) of Champagne, or sparkling wine
- 250 mL (1 cup) of shallots, minced
- 125 mL (1/2 cup) of butter, cubed
- 10 mL (2 tsp) of tarragon, chopped
